This is a lovely summer salad that can be enjoyed as a main or as a terrific accompaniment to fish or chicken, in smaller portions. It’s very light and super healthy but doesn’t compromise on flavor. Cauliflower rice works as a great base to lots of different ingredients so use this recipe as a guide rather than a doctrine.

Ingredients
- 1 head of cauliflower – grated
- Mint, finely chopped
- Parsley, finely chopped
- 3x spring onions, finely chopped
- 100 gr cucumber, deseeded
- 50 gr avocado
- 2 tbsp Pumpkin seeds
- 10 gr toasted flaked almonds
- Juice of two lemons
Method
- In a large bowl, mix all the ingredients and season with salt and pepper.
- Mix well and serve.
