Ingredients

• 1 large beetroot, grated
• 1/2 red onion, grated
• 1 tablespoon of ground flaxseed
• 2 tablespoons of ground almonds
• 1 egg
• 1/2 teaspoon of cumin
• 1/2 teaspoon of chilli flakes
• 2 teaspoons of garlic powder
• salt and pepper
• 10g Coconut oil

Method

1. Mix all the ingredients except for the coconut oil in a bowl until well combined, then cover and place in fridge for half an hour.
2. Heat a frying pan and melt the coconut oil. then form the mixture into either 2 large patties or 4 smaller ones. Cook on both sides until golden brown.
3. These are delicious on their own or dipped into Greek yoghurt. They are yummy topped with a poached/fried egg or on the side with a chicken breast and salad.
