We all love a bit mayo but the processed shop bought ones tend to be loaded with sugar and other unhealthy ingredients. Here is a fool proof recipe which is so easy to make and can be kept in a sealed container in the fridge for up to 1 week.

Ingredients
- 3/4 cup extra light olive oil
- 1 tbsp of fresh lemon juice
- 1 egg
- 1/2 tsp mustard
- Sea salt to taste
Method
- Combine all ingredients in a jar (needs to be large enough to fit the hand blender in).
- Stick the hand blender into the bottom of the jar and start to mix. You will see the ingredients begin to emulsify almost immediately. Slowly raise the blender out of the jar whilst still mixing.
- That’s it! So quick & easy!
