Lamb Tagine is a great, quick and easy meal that you can throw together quickly and then slow cook in the oven for hours. The lamb goes very soft and sweet and is great with a side of couscous.

Ingredients
- 1 tsp of coconut oil
- 3×350 gr packets of cubed lamb (beef works nicely too if you prefer)
- 3 red onions, diced
- 3 cloves of garlic, crushed
- 1 tin of chopped tomatoes
- 1/2 pint of stock (using left over chicken soup is a great option)
- 1/2 a cup of dried apricots
- 1/2 a cup of prunes
- 3 tbsp of paprika
- 1 tsp of cayenne pepper
- 1 tsp of cinnamon
- 1 tsp of ground ginger
- 1 tablespoon of honey
Method
- Preheat the oven at 130°C.
- Heat the coconut oil in a cast iron casserole dish on the hob. Fry over onions and garlic until onions are translucent.
- Add the meat and brown. Then add all the dry spices and mix until the meat is evenly coated.
- Now time to add the tomatoes, stock, honey, and dried fruit.
- Cover the pan and place in oven at 130c for 4-5 hours.
- Serve with some couscous and Moroccan spiced veggies!
