Ingredients
- 1 head of cauliflower
- ½ teaspoon salt
- 1 teaspoon olive oil
- 50g roasted chopped pistachios
- 75g currants
- 2 teaspoons dried mint
- 1 tablespoon honey/agave nectar
- Generous squeeze of lime
- 50g pomegranate seeds
- Small bunch of chopped mint
- Small bunch of chopped parsley
Method
- Breakup and place head of cauliflower in a food processor to make consistency of rice/couscous.
- Place in bowl and combine all other remaining ingredients.
