Ingredients
- 200g of oats (gluten free if needed)
- 30g of ground almonds
- 30g of desiccated coconut
- 30g of pumpkin seeds
- 30g of sunflower seeds
- 30g of ground flax seed
- 25g of cashew nuts
- 25g of almonds
- 50g of coconut oil (Lucy Bee is a great brand)
- 60g of raw honey/pure maple syrup
- 2 teaspoons of cinnamon
Fruit filling:
- 5 dessert apples (we use granny smiths)
- 1 packet of frozen summer fruit berries
- 3 tablespoons of raw honey/maple syrup
- 2 teaspoons of cinnamon
Method
- Preheat the oven at 180°C.
- For crumble topping firstly chop up the nuts into small pieces then put the rest of the dry ingredients in a large mixing bowl.
- Melt coconut oil, honey/maple syrup and cinnamon in a small saucepan.
- Pour on dry ingredients and mix up until fully coated.
- For fruit filling, peel, core and slice apples into thin pieces and place with the frozen summer fruits, honey/maple syrup and cinnamon in a large saucepan with a ¼ cup of water. Simmer until soft.
- Place softened fruit in an oven proof dish, top with the crumble topping and place in the oven for 30 minutes or until golden brown.
