Ingredients

Ingredients:

• 1 salmon fillet (approx. 120gr)
• 150gr courgette
• 30gr spring onions
• 100gr mushrooms
• 1 pepper
• 1tsp coconut oil
• 1tbsp balsamic vinegar
• salt and pepper
• 15gr feta

Marinade:

• 1tsp mustard
• 1tsp soy sauce
• 1tsp honey

Method

1. Marinade salmon in mustard, soy and honey and roast for 10-15 mins at 190°C. Salmon really doesn’t take long to bake and is so much better slightly under than slightly overcooked.
2. Roast courgettes, spring onions, mushrooms and red peppers in a little oil, seasoning and a splash of balsamic vinegar till soft. Important they don’t turn to mush – make sure they still have a little bite to them!
3. Sprinkle over some feta to add flavor, seasoning and a little added indulgence.
