Ingredients
Ingredients:
- 1 salmon fillet (approx. 120gr)
- 150gr courgette
- 30gr spring onions
- 100gr mushrooms
- 1 pepper
- 1tsp coconut oil
- 1tbsp balsamic vinegar
- salt and pepper
- 15gr feta
Marinade:
- 1tsp mustard
- 1tsp soy sauce
- 1tsp honey
Method
- Marinade salmon in mustard, soy and honey and roast for 10-15 mins at 190°C. Salmon really doesn’t take long to bake and is so much better slightly under than slightly overcooked.
- Roast courgettes, spring onions, mushrooms and red peppers in a little oil, seasoning and a splash of balsamic vinegar till soft. Important they don’t turn to mush – make sure they still have a little bite to them!
- Sprinkle over some feta to add flavor, seasoning and a little added indulgence.
