Marinade salmon in mustard, soy and honey and roast for 10-15 mins at 190°C. Salmon really doesn’t take long to bake and is so much better slightly under than slightly overcooked.
Roast courgettes, spring onions, mushrooms and red peppers in a little oil, seasoning and a splash of balsamic vinegar till soft. Important they don’t turn to mush – make sure they still have a little bite to them!
Sprinkle over some feta to add flavor, seasoning and a little added indulgence.
